Enjoy this no-added-salt Pesto recipe packed with calcium, magnesium and protein.
Ingredients you'll need:
2 red capsicums, halved and seeded
½ cup blanched almonds, toasted
2 tbsp. chopped fresh basil leaves
1 garlic clove, chopped
1tbsp. lemon juice
1 tbsp. Olive oil
Preheat grill on high. Cook capsicums, cut-side down, under grill for 5-7 minutes or until charred and blistered. Transfer to a bowl. Cover and set aside for 10 minutes. Peel and coarsely chop.
Process capsicums, almonds, basil leaves and garlic until finely chopped.
Add lemon juice and Olive oil.
Blend until almost smooth. Season with pepper.
Serve with pasta, use as a dip with low sodium corn chips, add to stir fry's or low sodium home-made pizza bases.
