Roasted Capsicum Pesto

Enjoy this no-added-salt Pesto recipe packed with calcium, magnesium and protein.

Ingredients you'll need:


2 red capsicums, halved and seeded

½ cup blanched almonds, toasted

2 tbsp. chopped fresh basil leaves

1 garlic clove, chopped

1tbsp. lemon juice

1 tbsp. Olive oil​


  • Preheat grill on high. Cook capsicums, cut-side down, under grill for 5-7 minutes or until charred and blistered. Transfer to a bowl. Cover and set aside for 10 minutes. Peel and coarsely chop.

  • Process capsicums, almonds, basil leaves and garlic until finely chopped.

  • Add lemon juice and Olive oil.

  • Blend until almost smooth. Season with pepper.

  • Serve with pasta, use as a dip with low sodium corn chips, add to stir fry's or low sodium home-made pizza bases.
